On Lordaeron at least, there was 0 inflation problem, in fact quite the opposite. The prices of everything had been slowly but steadily dropping ever since I joined the server. Now within the past month, the prices on everything have at least doubled, if not tripled or more. Flasks that used to be 25g apiece were 45g apiece last week and 55g apiece this week. Arctic Furs used to be 40g apiece, are now 250-300g apiece. Potions used to be 10g apiece, are now 30g apiece. You get the idea.
What you all have done with this "gold squish" is immediately reverse the trend of prices slowly dropping for months on end and caused them to immediately skyrocket. That's called INFLATION.

Same exact thing that happened on Icecrown...prices were low and getting lower, now they are all rising very fast.

Valignor (IC Horde) the lowbie lock. Having under 50s is kinda depressing but no biggie either way that changes as you level up.

Gold comes easy on IC. Just don't buy anything at the AH and sell every BOE that drops for you. Buying low level gear is pointless because of how fast you level and many people lvl to 80 with garbage gear. Also, pick up a gathering profession and sell at the AH. People pay ridiculous amounts for materials.

Yeah gathering professions are great if you're leveling. I personally grabbed skinning + mining as I leveled my first char for this exact reason, to set myself up with a nice base of gold when I hit 80 to fulfill all the gold sinks: the various flying skills, dual spec, some starter BoE gear.
The problem is that gathering professions give horrible bonuses once you're 80 (unless you're a tank with mining). If you want to min-max your char for PvP and PvE, you need to move on from gathering professions, and most serious raiding guilds will require that you have some sort of legitimate profession. By this point I have invested a ton of gold getting 450/450 on LW, ENG, BS, and JC for my two chars, as well as obtaining patterns so I can still make money crafting stuff. There is no going back to gathering professions at this point.
I need 4 flasks of endless rage per raid night, a bunch of agility food, and if I want to play my Hunter optimally, I need to be guzzling 5+ mana pots per fight as well. So, in order to raid, I need to do about 12 daily quests just to get my flasks and food for the night set up, and another 6+ daily quests PER ENCOUNTER to afford the mana pots. If I do ToC10 or ToC25 with 0 wipes, that still means I'm doing 30 daily quests to buy all the mana pots that I need, and 60 daily quests to do both. If you look at what prices were a month ago, which had been steady and even slightly dropping since like forever, it would have cost me ~100g per raid night to buy flasks and food, and around ~250g for potions. With the price of crafting mats being reasonable once upon a time, I could cover these costs by actually making use of my crafting professions without having to waste time on daily quests.
I came to Lordaeron to raid and pvp, not to farm boring quests over and over again. I put in my work doing nearly 2000 quests per character to get to 80 in the first place, plus all the daily quests to max my reps with the various factions that are needed for enchants and gear. However, because I don't have suboptimal gathering professions, and because this "gold squish to reduce nonexistant constant inflation" has in fact instantly created massive inflation, I find myself wasting time on daily quests again for 20-25g apiece and zero benefit besides. It's sucking the fun right out of playing here, and that's a big part of the reason the population is constantly in decline.
