Are professions crucial?

Just curious if they are. Because I am looking to make a DK (Since i never played one before) but I don't want to do something like blacksmithing and mining if it isn't necessary. I don't know if i'd use it in raids or anything like that but i'd like to have the option open.

No, they aren't. But you will be poor af if you don't have any professions because basically your only way of making money, apart from questing, would be farming mobs for materials.

I never ever take professions if my level is ahead of the respective profession skill, so I have never had any professions on a DK of mine.
