What are some of the most sought after classes for pve and why?

Tanks or healers because no one wants to take responsibility in this realm. Especially if the population consists of 80% of 16 years old and below.
As for the question specifically, make a Paladin, death knight, or Druid if you want to tank and make a Druid, shaman, or a priest if you are going to heal for the first time. Because holy Paladins carries a lot of responsibility on a raid and there is only room for 1 good Holy Paladin on a raid.
The population is huge and there's pretty much nothing new, but usually less played classes/specs are sought, but honestly just make what you like.
A tank/healer guarantees you priority in RDF and raids, but if you are joining an already established raiding guild that has tanks/healers, then an underplayed dps class that performs well like a warlock or something is "sought".
I've been playing support since the moltdown for this very reason everyone just wants to dps.
You forgot protection warrior it is very viable tank spec in the right hands.
In an ideal raid you would have one resto shammy, one resto druid, one disc priest for the absorbs, one holy priest and a holy paladin but in most cases you won't have a holy priest so it's fine to have 2 holy paladins or 2 resto druids or shammy but there should never be more then one disc priest in a raid.
Well, protection warriors suffer a lot of stigma on this realm and there are only a bunch of them that can really use its full potential. In addition, at least, most pug tanks don't know how prepot, use demoralizing shout, use vigilance on TOP aggro dps, even worse taunt... like they taunt 5-6 seconds after they loss aggro.
Yep my bad about that, 2 disc priest is a no-no for a 25 man raid. But if you have 2 holy Paladins, the other Holy Paladin will be evaluated unfairly. Why, you ask? Because only 1 judgement of light can only be applied, the other Paladin will suffer an hps drop. I mean most raid leaders judge a healers performance on warmane based on his hps, which is ridiculous and deserves another topic on its own.
But if you ask me, using meters is not the best way to evaluate a healer.

Yep back to the topic, if you are joining an established guild, I agree an underplayed dps class will be sought out like warlock, boomkin, and sometimes a good hunter who can use his defensives and utility spells

Shamans for bloodlust, Druids for buffs/brez, Warlocks (destro especially), and pretty much any tank/healer. Tanks are the single most sought after role, but honestly you won't have trouble finding a spot for anything you choose
