So, any suggestions where to start and what expansion would get me 'hook'd up' the fastest? (that is in terms of PVE mostly)

Well the two best servers are WoTLk or TBC. Depending on what you're looking for, I know PVE, but for example; WoTLK is more user friendly as far as gearing, rep, and getting into raiding. TBC is more hardcore. To get into heroics you'll need some rep, but even beyond that you'll have to find a guide, there are a few good one's out on youtube. Just search for TBC gearing for X Class (X being whatever class you choose). WoTLk just hit 80 and book it over to Forge of Souls and Pit of Saron. Run those until you get around 4k gs (GearScore lite is great for finding out your gear score. Google it). Than run Heroic version oh and hit up ToC 5m Normal. Good dps trinket it in there. Once around 4.5k GS you can queue for RDF heroics for Emblems and go to your emblem vendor in Dal and get some tier gear. Save all your Frost Emblems, once at 50 get your frost emblem back piece. That should put you over 5k gs and start getting you into icc groups.
P.S. Find an entry level ICC guild to get going raiding. Watch strats on youtube and read boss guides.
Man, I got to 4.5k gs within a week from making my first character on Icecrown. Wotlk is so forgiving. Definitely go on TBC, although PVE is harder to get into, it feels more epic and rewarding. Fos/Pos and rdf spam got old really fast for me, like within a few days.

For me personally TBC is more fun and less streamlined, it's a bit more chaotic, everyone doing their own weird thing and fulfilling their fetishes. Wotlk feels a bit too sterile, too formulaic.

Arthas > any character in the game so far (cuz its related to best rts game ever-wc3)
WOTLK spirit beasts > MOP
Howling fjord music > Any area music
Thank you for the great advice guys, but this topic had been dead for few days I think, so I just decided to try Outland TBC; I'm currently lvl30 with Warrior. Guess you were right when it comes to being less user friendly, most of the time I can't take more than 2 mobs at once...
What each exp brought. Maybe that is?
Start with a Horde character, end with a Horde character. If you find yourself with an Alliance character you screwed something up. Best of luck!
