Help me decide what tank to play

Hello Warmane community!

I would like to ask some advice about what tank to play on the new frostmourne server.
Some details: i want to focus 50-50% on both PVE and PVP, played wow many years on and off and more recently tbc classic as a paladin tank ; my experience with wotlk PVE is kind of low, I played original wotlk as a dps dk, and pvp mostly on instant PVP 80 servers, but still quite low experience.
From what I found warrior tank is not that good and druid I barely ever played the class in all my years of wow, therefore I want to play either paladin or dk.

For PvE : What would you recommend and why? I like to both main tank and off tank.
For PvP : I would like to start that I dislike playing healer therefore no holy paladin here. So between ret/preg paladin and unholy dk what would you recommend? From wpvp, bgs and arena perspective.
Also what class you you say will be the most needed in both pvp and pve? I know both classes are very populated in wotlk.
And unfortunately I have time to focus on only 1 class, so no alts for me.

Tanks are always needed and from those, Paladins and DK's are most appreciated followed by druids. Warrior tanks aren't too bad from 1 to ToC. In ICC they start to get replaced by other tanks.

Paladins are strong tanks, and so are DK's.
Paladins are expected to use a lot of raid utility spells (Hand of Freedom/Salvation/Protection, Divine Sacrifice/Guardian) on top of their tanking. They're strong single target and AoE tanks. Paladins have several PvP specs to choose from, good all around spec is Retri, simple as that.

DK's excel at single target tanking. Don't really know what else they do (only that they spec for Imp. Icy talons so raids don't take FDK's [Guess 2 protadins + FDK DPS is out of the option for most for w/e reason]). Personal opinion: I rather play any DPS DK spec over DK tanking. It just never felt as fun as DPSing as one. In terms of PvP, it would be Unholy most likely. FDK's in PvP are underdogs. Not familiar with BDK's in PvP.

This is so true. DK tanking is incredibly boring in raids. You do it to find a raid spot easier so you can gear up a dps spec too but I don't know if anyone really enjoys tanking as DK. I certainly don't!
