Hi, I read that of I change faction the character will be of the opposing Race. Does my bloodelf become drae, darf or human? Or can i choose?

you will be able to choose.

As test, you may create a character on Blackrock realm -> then use "Faction change" service on website (which costs 0 on that realm)
So you will see how it works
