Pets with faster attack speeds in Vanilla/Classic (check Petopia) have faster attack speeds when tamed on Onyxia (from the few I checked/tested on the PTR).
For the most part, this only mattered in PvP because of spell pushback. You'll see a negligible difference in PvE. Two different wolves with two different attack speeds will have the same auto-attack DPS regardless of their attack speed, it'll just make more attacks in that same second to reach the same damage.
Because the 3.3.5 client does not have the "Beast Training" UI/frame of Vanilla, they didn't have the ability to use it for Vanilla phase of Onyxia. Instead, they used the talent trees from 3.3.5 to "hack" in as close to the same mechanics of Vanilla as they could. It's not perfect, but it works.
