I do not understand, what gameplay advantages PvP server setting has...
Basically, if one wanted to play PvP, they would simply que up in BGs or Arenas, or perhaps Duel in Dalaran...
But, with world pvp enabled, basically any 80lvl stealth class, or even any 80lvl can gank you freerly, corpse spawn you, and one hit you, while you are trying to collect your 4/7 Raptor Meat.

Unfortunately, Blizz made the game like this and nothing can be done about it, unless the developers make it so that the player can disable it on whatever map they are and thus avoid being killed repeatedly.
I agree with Zorino. The only advice I can give you is to switch maps for 30 minutes and then come back. That usually works for me. To fill the time (if I don't have any quests to complete elsewhere), I'll do jobs, which are important at level 80.
I am not sure how "Impossible" this is to do for warmane.

If it was a "Normal" realm setting, then players would enable/disable pvp on the go, just like in retail

Yes, but being a private server it's clear that the devs have decided that the server should be like this and maybe players are fine with it too.

On a more serious note, change area, also use /Global, lots of 80s are bored in main cities or Dalaran and they love to gank the gankers.

Not everyone uses only two buttons, some even use three, so you can imagine the effort and concentration they put into it...
