I knew something was up when I was having the same issue on each of my half dozen old Mac systems running Mojave... I'm with all of you, desperate to play using the proper Mac client again soon.
I'm running Mojave and just fixed using (Nerivaaa's) method.
Follow the guidance from this link to install deprecated version of Quartz/Wine .pkg

Then download WotLK windows version from warmane site
