As far as wushu, there's the IP man series, Fearless, Drunken master 1&2, of course the Bruce Lee movies. Y'know what, gonna throw in Enter the Fist because of how awful it is.
You could watch some John Woo movies too, so many delicious one-take scenes in his movies. I'm such a sucker for them.
