Hello!
I've been wondering, some of my guildies do as well, if we got more than 150 or 200 mounts, will we still get the achievement and the achievement rewards after it gets fixed, or should we wait, and not reach those numbers until the achievements get fixed?

Achievement criteria check should be triggered when you log in or when you get new mount. But it depends on how they script those achievements.

So in short I should just keep putting new stuff in the bank to be on the safe side and wait around untill it gets fixed...

Yes.
While it is unlikely that Warmane will not give rewards for the achievements once fixed, it is still safer to store in bank while they remain bugged.
In the meantime, open a report on bugtracker, and have your friends/acquaintances upvote the bug!
