Just scanning thru the Auction House and seems obvious from the huge prices that Mineral/Herb/Frostweave cloth seem to be purposely set to very low for some reason, just wondering is this expected to always stay this way or maybe after half a year you may bump it up.
The players typically control the economy on a server. The only way that the admins can have control of the economy is if they add auction bots or wipe people's gold at certain intervals. The reason those items are so cheap is because of supply and demand. All of these items are very common and thus, aren't worth much at all. That's how an economy works, even in the real world. I've had some minor issues finding mineral veins, but especially in the case of Frostweave cloth, you probably won't ever see it's price go very high at all.

I'm not saying the minerals/cloth are cheap on the AH. Im saying they are ridiclously overpriced because they are set to very low respawn rate. 75g for a stack of saronite ore?. that tells me the respawn rate is beyond low / not even spawning at all.

I don't know where you are mining but the respawnrate is just normal. I've been able to get consistant ~100 ore per hour, sometimes a bit less but it's definitely not 'beyond low/ not even spawning at all'.
what about weapons and armor? they're also overpriced as ****, a few golds for lvl 20 armor, lol.
Ofc only players that aim to create twinks will buy overpriced items ... I had a guy trying to sell me some lvl 50 epic staff for druid for 300g LOL, when the only thing I needed is gain 8 more levels and move to outlands... so overpriced items is just for guys that have money to spend ...
I literally saw people selling solid stone for 1 silver and 30copper, when the damn stack vendors for 20silver itself, so they RISK auction deposit for almost no profit. And no its not a stack of 1 stone (i know that trick), they literally sell entire stacks with that price (per stone btw, not per stack).
Some things are either underpriced out of stupidity or really too much stock for too few who buy them.
Either way, with this kind of population I GUARANTEE you that there are people who spend hours with their addons and alts scanning the AH and buying/reselling since they enjoy that more than playing the game, nothing you can do about that however, only implementing gold drains like lottery and what not.

Sounds like you're trying to compare Lordaeron prices to retail prices.
I doubt there's a whole load of high level miners on Lordaeron, hence the rarity of the ore, hence the price. When the majority of the server hits high 70s/80, you'll see more miners, which should saturate the market with current expac ore. The price should dwindle down then, levelling out at some point.
Until then, if you want saronite, you're gonna have to buy it, or level a character with mining.
if you never played wow or any other mmo please google Economy and get to know how economy works and what happens with price when demands are high and when demands are low.
I am a person who sells on the auction house and i am very satisfied because i am getting paid huge for my hard work ( cloth, mine, gems etc ... )
Maybe you are bad at farming , don't use addons, don't know what you are doing etc... the only thing pissing me off is people who are very illiterate and put items for sale at half the price of the 2nd most cheapest item ( example stack of saroinite for 40 gold if the 2nd cheapest is 70 or so ... )
can't remember how many times i have bought those items and resold them for the more "appropirate price" :)
Well all that tells me is the server seems to be skewed just to keep prices extremely high. Fel iron ore like non existant 235g a stack cause the spawn rate can be 30 minutes a node...And northrend cloth dropping at like a 1% drop rate if you are a tailor with northrend salavage talent...lol?!? almost seems these implementations are on purpose rather than a bug that hasn't been fixed in 3 months.
Those numbers are from the top of your head or are they based on something? if they are based on some research i would be very interested in seeing them.

And as far as tailors just askem if they have that talent they are bugged and the drop rate is piss. Its why northrend cloth is 40g a stack because the tailors that actually need it can't get it cause the bug lolol.

Just get a gatherer database. I went from 300 to 350 in 4 or 5 hours using 280 mount.
PS. BEM is way better to mine fel iron, at least from my experience.
