More specifically, I know the minimal download means you download as you play, but does that mean I need to redownload every time I open up the client?
I ask because I hate torrenting things and would love to avoid a 27 Gig Torrent.

What is the difference between MoP minimal download and the regular one?

No, it does not download the same thing again anytime you start it. Evrything downloaded will be saved ( at the end it will reach 27GB anyway, just like the other client)
