So i made an undead rogue, and i dont know anything about the class, i dont know which professions i should take, how good it is in pvp/pve etc etc. So, pretty much any advice would be appreciated.

In PvP rogues are a pain in the god damn ***. Professions I would go with Skinning and Leatherworking so you can get the leatherworking enchant and have some crit (eventually you can change skinning to Inscription for the enchant) But they are a good class over all, just don't level as subtlety when questing by yourself cause you won't get a back stab at all or easily.
Stating which expansion you're talking about would help.

Level up as combat, once at 80 spec to mutilate for PvP and possibly PvE (not that gear-dependant). Once you get fully geared in PvP terms, just spec to sub which is more fun (shadowstep ftw)
For proffesions, I recommend engineering, you can squeeze the most fun out of it in PvP (mostly bgs and world PvP) and mining as secondary, and later replace mining with a proffesion that offers a strong bonus (i'd say leatherworking).
