Can someone please explain what the difference between the two MOP Servers is? I have been searching but I can't find any information. Seems that a lot has changed since the last time I played a few years ago.

As of right now nothing is different between the two. Its just to split the population.

All servers are 7x rate atm, so the difference is the population basically. Frostwolf have more

You should play horde, they have the faster queues.

Also, Sargeras has become a test realm for new updates. When Molten is opening new instances and releasing new content, they will probably do it on Sargeras first to test it out due to instability problems and then implement it on Frostwolf.
There was an issue with population cap before as it was 3500 and for free players it was much better to play on less populated server, but right now there are basically no problems with ques on mop realms. We will see if it remains like it after servers are moved to Europe.

Frostwolf is the more PvP oriented server judging by the guild recruitment.

Like @Rufus90 said. Sargeras gets all the updates before frostwolf, so i would suggest sargeras + sargeras never has queues, since you are not premium it would mean much to you.
