Does anyone know if it's possible to do the quest twice?, if i delete my already obtained weapon from the quest chain?, so i could pick a different one, did anyone try or does anyone know info on this?

Unless the quest is repeatable (something like a daily), you cannot redo the quest. If you do a quick search on google, you'll see that this is a commonly requested feature.
