First off, what is the difference between the two WotLK clients? One says old and I'm not sure what that means exactly. Also, are all the features Kaer named in the sticky about Lordaeron still in effect, or were those temporary because the realm was just being launched?

The old client, is a client with the old character models, and the other one is a client with the new Warlords of Draenor character models. They have some issues though, so i would recommend downloading the old.

the Lordaeron Realm Info is how the server is running idd.

That's a bummer, I remember the RDF being a pretty big deal when it was finally running on Molten. One more thing, does that mean the daily emblems are no longer obtainable, or did they implement something to replace those?

If I would see WotLK OLD I would think it is decrepated. It would be a thousand times more logical to call it WotLK NEW or WotLK WoD models or anything.
