You don't HAVE to change gear, but it is highly recommended one do so, since the stats you need on the gear as based on the spec it was designed for.
For example Holy Paladin gear has intellect, while Retribution Paladin has strength.
Since Retribution Paladin gets all of its attack power from strength, intellect is useless, so you shouldn't use Holy Paladin gear. It won't even increase you're mana bar like it did in older expansions.
