I have a level 16 undead warrior. My trainer has been giving me tanking abilities, but I don't have defensive stance. I have gone to the trainer in Brill, UC, and Org. None of them have a quest for me to get defensive stance.

As an undead, it should be in Brill. Are you sure you didn't take the quest and leave it somewhere along the chain?

I may have accidentally abandoned the quest while cleaning out my log. I went back to the guy in Brill, but he has no quest available. Is there a way to get the quest back, or do I need to start a new character?

You can find where in the chain you stopped (it seems that you have first part(s) completed).

Just track it down and complete it. Quests don't disappear just like that in the game.
Still, if you fail at that, then just go ahead and reroll. Reaching 16lvl takes no more than 4 hours at 1x rate.
