So the question arises, what's the LEAST played class of wotlk?
Most unplayed classes are unplayed for a reason. You're effectively shooting yourself in the foot. Such examples are: frost mage and subtlety rogue in pve. If you really want to play a class that is rather unplayed, while at the same time not utterly gimping yourself, I'd say you can go for either feral druid/boomkin/enhancement shaman if dpsing (cats rule, not biased at all Kappa). Rarest tank in the game would probably be the warrior, and arguably the most difficult one to play properly. Rarest healer from my experience is the holy priest, although as discipline you may have higher success being taken into pug and (perhaps) guild raids.
DISCLAIMER: The following statements are based on my personal experience and may or may not be true for everyone around. They are, as well, based solely on the pve aspect of said classes, even though the enhancement shaman/holy priest probably applies to pvp as well, I do not focus on pvp and/or have enough pvp experience to answer questions related to it reliably.
Not sure what's least played but I can say what is weak:
In PvP, resto druids are pretty weak and can't survive SMourne warriors. So you won't see many.
Ele and Enhance shamans are also very weak in the current meta when other classes are BiS.

there is not a single class that could kill restoration druid alone. if rdudu knows how to play ofc.
tho its pretty unbalanced for r/b druids in 2v2, but they shine in 3v3.
Warlock is underplayed in pve as they are weaker compared to other rdps. Enhancement is basically unplayed in general as its overall bad/bugged and is basically a discount frost dk. Feral DPS is underplayed as there isn't as much demand for them compared to balance/resto/tank in pve. Feral is also hard to play.
Well, i haven't seen any Mageladin (hybrid prot/heal paladin) yet in pvp. So they seem to be pretty rare... It needs alot of gear tho. But it is really really fun to play in bgs and if you are a rare snowflake it would be perfect for you since noone plays it in here.
Typical noob druid thinks he is OP because he can 1v1 other classes while playing resto.
I'm talking specifically about resto druids on Icecrown in arena. They simply cannot survive certain matchups, even in 3s.
Warlocks are pretty rare in both pve and pvp in my experience, even though they are a very strong class in pvp, dunno about pve.
As for eleshamans and rdruids beeing weak... lol.
