What happend to the old and new WoTLK clients you used to be able to choose there is only 1 option there now? what happend will it come back?

Only old one was kept because of issues that the new one had. You can still get updated models through technical guides here.

if i download all those for wotlk will it look the same as the other one? i did download the old one but the log in screen and everything in general was just worse not just the models

Don't download all of those, read every guide and see which one you like best. It will look either the same, better or worse than the "new" launcher depending on which patches for the launcher you download.
Everything looked "bad" because it's a 2008 game. I still think that old models and textures generally look pretty good for an MMO even in the current year.
