which ones would you say are the most used classes? and the least?

On Alliance Warriors and Paladins because they are the top arena comp and great in pvp, Warrior is also top dps for pve and paladins all speccs are very good for any playstyle you have in pve, On Alliance you se this very clearly but on Horde it's much more mixed up, seems that mage has been a favorite for Horde for ages.
For least - Id say demo warlock, shadow priest, boomkins. I think people dont like them cause seeing BIG NUMBERS from crits of spells is not as satisfactional as hitting with Your axe/mace/sword. Mage is exception here, probably because his DPS is awesome, like top 1-3 and he can probably make one of the biggest crits in the entire expansion.
Well there are still classes like ele or enh sham, survi hunt or bm hunt etc, people don't play them in pve cause they just sucks (or are far far behind any "normal" spec)
Most played from PvE perspective:
In general - Plate > Cloth > Leather / Mail
Plate classes are strong all around.
Cloth classes are many, and there are many viable specs.
Leather is divided with rogues and druids. Rogues having two strong specs, and Druids having mere 4.
Mail is for Hunters and Shamans. Shamans are mainly wanted as Restoration; Hunters are wanted as Marksmanship.
Good specs but less played:
Boomkins - Strong DPS, utility, relatively easy. Can be geared easily with Restoration as MS/OS.
Demonology - Mainly seen as raid wide SP buffer. Rotation is meh, and fun starts when boss reaches 35% health.
Affliction - In a sense. 25man raids would rather get Demonology before getting Affliction (as their only Warlock), so if you have Demo main/off-spec, you're probably asked to switch to that first. If luck is on your side, another Demonology joins and you can switch back to Affliction.
Shadow - For me at least, DPSing as one is uncomfortable. I don't like how Mind Flay works (it's its channeling). If it were a regular cast spell, I would probably play this spec more often.
For me Rouge is fun but hard to gear because so many people take on leather items and rouge damage comes of very late in the game. You will have energy starvation for the most part of the game which is sad.
Shadow priest is one of my favorite dps. I love this class. As for warlock I'm playing destruction because for some reasons this spec gives way more dps than affliction (probably not great gear).
