if I have an off-hand weapon, can I transmog its appearance into a main hand weapon?

I think you can, but it may not look as good as you expected. Most notable transmog being Twin Blades of Azzinoth. Where if transmogged as you should, there's no visual bugs. If you transmog the off-hand version to main hand, the small shield over your back of the hand/forearm would be on the other side, between your arm and side.

Thank you for your response! In my case, I play rogue and I've got an off-hand dagger to transmog to my main hand weapon

If it's more or less basic dagger, there shouldn't be any issues. Mainly problems arise if it's not symmetrical design on the dagger (left|right). This is with the assumption off-hand transmog can be put to main hand.
