Onyxia - Which Professions?

Hello,

Trying to figure out which professions to have on which characters for the upcoming TBC, I have some idea for what I should be taking but I'm hoping some boffins will be able to give me advise on this! Here's my current roster:
Prot Paladin
Holy Priest
Prot Warrior
Bear Druid (Balance in TBC)
Mage

One issue I'm having is whether I should take tailoring on my Druid for the amazing spellpower gear that can be made, or if I should just go Mining/Herb to get the most value out of gathering in flying form. I'm also leaning towards having Enchanting on the Prot Paladin so that I can disenchant a lot of the trash drops I'll be getting from AOE farming. Beyond that, I'm really not sure what to take. Any advise is greatly welcomed.
